This is an easy salsa recipe I've developed over maybe 15 batches. Add whatever peppers suit your spice tolerance. I generally split a batch in half and do half with ½ habanero for my wife and half with ½ ghost pepper for myself, depending on what I grew this year.
Ingredients
- 3 small tomatoes
- ½ Habenero or equivalent (preferably roasted)
- 2 clove garlic
- 1/3 large bell pepper
- 1/2 medium onion, roasted
- 1 can Rotel, drained
- 1 can tomato sauce
- ½ cup white vinegar
- ½ tsp sugar
- ½ tsp salt
- ½ tsp cumin
- ½ tsp black pepper
- ½ tsp paprika
- Small sprinkle of cilantro
Recipe
- Blend tomatoes, habanero, garlic, and bell pepper in a food processor until a paste.
- Mix the blend and all other ingredients in skillet; heat and mix until paste is smooth.
- Simmer for 4 minutes.
- Take off heat and cool overnight to let flavors mix (important!).
- Spoon off any separated liquid from the top and serve.
