Both
Both the AES and MVS output effectively the same video signals, as they are based on the same hardware. Some revisions are worse, usually later ones, which have more noise and worse colors than earlier revisions due to cost cutting.
All games are output at 320x224 progressive resolution. Some games letterbox internally, such as Metal Slug, which outputs at 304x224 to prevent ghosting on consumer CRTs at the time. The dev team has said that some Sony Trinitrons ghost the first and last 8 pixels, which they letterboxed to prevent.

AES
All AES consoles output RGB and composite by default. This is provided over the AV multi out.
MVS
All MVS arcade boards output RGB over the MVS connector (similar to JAMMA).
