AV:Jam-Video-Converters
Recently, a user going by the names JamVanderloeff, wakabavideo, and others has created a few useful open source (MIT License) analog video converters.
All of his PCBs are powered over one USB-C receptacle and are designed to be mounted in a custom extruded aluminum chassis with PCBs for side panels, included in the Gerber files.
RGB to Component
This PCB uses 4 TPF141 filters and an LM1881 sync stripper to transcode a RGB signal to YPbPr. The PCB supports both SCART and VGA depending on your configuration, and has minimal to no latency, as it is simply modifying the video encoding without changing what it contains.

RGB to NTSC
This PCB uses a Sony CXA2075 to convert RGB to Luma/Chroma with very little latency. It then either combines Luma and Chroma for composite, or keeps them separate for S-Video. Again, very low latency, as the CXA2075 chip is very well designed.

Component to RGB
This PCB uses a LMH1251 to convert YPbPr to either HD15 for VGA, or a SCART connector. The PCB, much like its inverse RGB to Component, supports either with the same PCB, with a standard 0.100" header to switch between CSYNC and separate H and V syncs.
